Consumption and Nutritional significance of Millets

A. Millet name:  Sorghum

Ingredient/product: Flour, puffed

Nutritional significance:

  • Rich in protein, fibre, thiamine, folic acid and riboflavin
  • Contains resistant starch
  • Possesses anti-diabetic, anti-cancerous and cardio protective constituents
  • Exhibits angiotensin I converting inhibitory activity

B. Millet name: Pearl Millet 

Ingredient/product: Flour

Nutritional significance:

  • Rich in unsaturated fatty acids such as oleic acid
  • Rich in dietary fiber with prebiotic potential
  • Ferulic acid and coumaric acid with anti-proliferative activity
  • Rich in iron and zinc
  • Ameliorate anemia
